Guests were supposed to see the food being prepared, feel the energy of the line, connect with what was happening behind the pass. That was the idea when we designed the space.

What we did not fully account for was what an open kitchen does to a dining room acoustically. Within the first few weeks of service, the pattern was clear: tables near the kitchen were the last to be requested. Guests seated there were leaning forward, raising their voices, finishing their meals faster. A few left reviews that mentioned noise before they mentioned food.

We looked at a few options before settling on ceiling-mounted acoustic panels as the primary solution. A restaurant manager we knew in JBR had used shaheenacoustic for a similar brief and recommended them without hesitation. The consultation process started from there.

Why an open kitchen is an acoustic problem

A standard restaurant kitchen is separated from the dining room by walls, a service window at most. The noise it generates — extraction fans, steel on steel, the clatter of a busy service — stays largely contained. An open kitchen removes that separation entirely. Everything the kitchen produces acoustically enters the dining room directly.

Our space compounded the problem. The dining room has a ceiling height of just under five metres, polished concrete floors, and hard plaster walls. Every surface was reflective. Sound from the kitchen hit the ceiling, bounced to the floor, reflected off the walls, and arrived at the guest tables from multiple directions at once. The result was not just loud — it was directionless and tiring in a way that made conversation feel like work.

Wall panels were not a straightforward answer. The walls in the dining area carry artwork and service stations. Covering significant wall surface would have changed the character of the space in ways the owner was not willing to accept. The ceiling was the one large continuous surface that could absorb sound without compromising the interior design.

The assessment and what it found

The Shaheen Acoustic team visited during a lunch service, which was exactly the right time. They measured reverberation at different points in the dining room — near the kitchen pass, at mid-room, and at the far tables — and tracked how noise levels varied across zones. The assessment confirmed what the reviews had been telling us: the area within roughly six metres of the kitchen pass was where the acoustic problem was most severe, and the ceiling directly above that zone was the primary reflection surface making it worse.

The recommendation was focused rather than total. Ceiling-mounted acoustic panels across the kitchen-adjacent zone, with a secondary installation above the central dining area to manage the general reverberation across the room. The panels in the kitchen zone would handle the direct noise from service. The central panels would address the longer reverb tail that was making the whole room feel louder than it needed to.

Critically, the recommendation worked with the ceiling design rather than against it. The existing pendant lighting was incorporated into the panel layout. The installation pattern was designed to look considered rather than remedial.

Installation during dark hours

The installation ran across three nights, starting after last service and completing before morning prep began. We did not close for a single lunch or dinner. For a restaurant in its first year of trading, that mattered.

The ceiling-mounted panels were suspended on a recessed track system that kept them visually clean from below — no visible fixings, no industrial appearance. Panel fabric was matched to a tone close to the existing ceiling colour so the installation read as intentional design rather than a retrofit.

What changed in the dining room

The difference was noticeable within the first service after installation. Not subtle — noticeable.

Tables near the kitchen pass are now requested. Within three weeks of the installation, the pattern reversed. Guests who had previously avoided the kitchen-side tables were now specifically asking for them — the view of the kitchen had become an asset again rather than a liability.

Conversations at normal volume are possible again. Staff noticed it first. Tables were no longer leaning in. The physical posture of a busy dining room shifted. That is a reliable signal that the acoustic environment has actually changed.

The ceiling panels disappeared into the design. Guests do not comment on them. Several people in the industry who have visited since the installation have asked what we did to the space without being able to identify the panels as the answer. That is the outcome we wanted.

Kitchen energy reads as atmosphere, not noise. The visual theatre of the open kitchen is still fully present. What the panels removed was the acoustic overspill that was turning theatre into fatigue. The concept works the way it was supposed to.

If you are running a restaurant in Dubai with hard surfaces, high ceilings, or an open kitchen and you have started seeing noise mentioned in reviews, the ceiling is usually where the solution starts. Their Acoustic Ceiling Panels in Dubai are designed for exactly this kind of brief — spaces where the walls cannot carry the treatment and the ceiling has to do the work.

What I would have done differently

We would have commissioned the acoustic assessment before we opened, not after the reviews started coming in. The open kitchen decision and the hard-surface interior were both made without an acoustic consultant in the room. Either of those choices individually is manageable. Together, in a five-metre-ceiling space, they needed to be planned for.

The ceiling panel installation solved the problem we created. It would have been cheaper — in every sense — to have designed for it from the start.

The open kitchen was the concept.
